Spatchcock Chicken with Cherry Tomatoes and Spinach

Something different for tonight’s dinner. Roast chicken and pasta instead of the normal rice.

材料
- 1whole jumbo chicken
- Chicken broth, liquid, ready to use type
- Olive Oil
- Spinach
- Dried mixed herbs, thyme, parsley, etc
- Onion and garlic powder
- Crushed black pepper
- All-in one seasoning powder, optional
- 2packs cherry tomatoes
- 1pkt whole garlic
做法
- 01Remove the backbone of chicken
- 02Wash and pat dry with kitchen towel.
- 03Rub chicken with olive oil.
- 04Rub chicken with dry mixed herbs, then onion and garlic powder, crushed black pepper,c seasoning powder
- 05Cut whole garlic (top and bottom) and peel
- 06Place 2/3 of cherry tomatoes and garlic on oven dish
- 07Place the chicken on the center, flatten back side up.
- 08Pour chicken broth (almost half level of the chicken or a bit less)
- 09Place the remaining tomato and garlic on the sides.
- 10Splash the chicken with olive oil. This will make the chicken golden when roasted.
- 11Pre heat oven to around 200deg C.
- 12Bake the chicken for around 1hr.
- 13Place the spinach and serve.
