Simple Focaccia Bread

My daughter did some nice focaccia bread which took 3 days to make! I don’t have that patience to wait 3 day since I needed to get some eggs benedicts served for breakfast.

So here’s a really simple version that I adapted from searching the internet. Takes just 2 hours.

  • 1 kgplain flour
  • 600 gwarm water
  • 3 tspsalt
  • 22 gdry yeast
Drizzle
  • Lots ofolive oil, extra virgin
  • As neededsalt flakes
Toppings
  • 10cherry tomators, cut into halves
  • 6olives , pitted
  • Somerosemary leaves

    <p>Place the flour, salt, yeast into the standmixer and stir through.</p>
  2. 02
    <p>Add the warm water and knead until elastic. About 10 minutes.</p>
  3. 03
    <p>Take the dough out and oil the bowl. Return the dough and cover the bowl with shrink wrap or damp cloth.</p>
  4. 04
    <p>Rest until dough doubles - about 30 minutes at 40C.</p>

    <p>Oil a pan generously with olive oil, and then sprinkle with salt flakes. Place the dough into the pan (about 50 x 30 cm). </p>

    <p>Poke holes with fingers.</p>
  7. 07
    <p>Preheat oven to 250C.</p>
  8. 08
    <p>Raise dough to double, then put the tomatoes and olives into some of the holes that were poked.</p>

    <p>Top with generate amount of olive oil and salt.</p>

    <p>Bake at 250C for 30 minutes.</p>
