Ingredients
Pastry
- 350 gplain flour
- 25 gcorn flour
- 35 gicing sugar
- 250 gbutter - ice cold, cut into cubes
- 2egg yolks
- 60 gmilk powder
- 600 gPineapple Jam (see below)
Pineapple Jam Filing
- 2 mediumPineapple, chopped
- 3 cmcinnamon stick
- 250 gRock Sugar
- 4 piecescloves
Method
- Pastry:
- 01<p>Put the butter and plain and corn flour into the blender.</p>
- 02When it resembles bread crumbs, add in the rest of the ingredients, blend till it becomes a dough, not more than 1 minutes.
- 03Divide both the dough and the pineapple tarts into 60 portions.
- 04Wrap each pineapple portion with the pastry filling.
- 05Egg wash with egg yolk twice, allowing the first layer to dry before applying the next.
- 06<p>Bake at 180C for 15 minutes. Not over.</p>
- Pineapple Jam Filing
- 07<p>Strain juice from pineapple</p>
- 08<p>Place pineapple, sugar and spices in a flat-bottomed pan (copper, enamel or stainless steel preferred in this order) and cook over gentle heat for 30 minutes.</p>
- 09<p>Stir occasionally to prevent burning. If jam is too dry, add some of the strained juice.</p>
- 10<p>Let it simmer until jam is stick and slightly browned.</p>
- 11<p>Leave it to cool.</p>
