Fried Rice Paradise (新洲炒饭)

This version of fried rice is probably one of the best in the world. For some reason, people call it Singapore fried rice. I am not so sure if this is invented in Singapore, but this dish has probably made Singapore famous during the 1970s or 80s. Most restaurants in every China town in the world carries this dish. Something Singaporeans are not even aware of then.
We just call it fried rice. We always cook it this way. This version is quite different from the Taiwanese’s version of Golden fried rice. The latter coats every grain of rice with the egg or egg yolk (in better restaurants). For the Singapore fried rice, you see pieces of the omelette mixed into the well seasoned rice. In addition, our version has a lot more ingredients including proteins and veggies. It is a meal on its own.
This is an easy dish to make, and is a frequent meal for most families. It is best cooked with rice that is cooked the day before, and best with long grain rice.
A good fried rice is chewy and firm, every grain is coated with the seasoning and fragrant. Nothing sticks to another thing. It requires practice, and nothing difficult.

Bahan-bahan
- 2 cupscold, cooked rice (basmati preferred but any long grain is good, cooked yesterday)
- 1 Tbspcooking oil, canola, sunflower, peanut, any kind, just not olive oil
- 2eggs, lightly beaten
- 5 clovesof garlic, finely chopped
- 2 Tbspchopped onions, can be any kind of onion
- 1 Tbspsoya sauce or fish sauce, adjust accordingly
- 1/2 tsppepper
- Chinese sausage, sliced
- Raw prawns, as many as you want, diced, whole, tails on or off - up to you
- Any kind of ham or bacon
- Any kind of fresh or frozen veggies, diced - peas, corn, carrots, beans etc (no leaves)
- Any leftover meat, leave out the sauce, diced
- Minced of any kind, cooked or raw (if cooked, adjust the seasoning accordingly)
- Char siew, BBQ pork
- Fried dried shrimps
- Fried dried fish
- Fried shallots
- Green onions
- Sliced cut red chilies
Cara
- 01Heat up a pan to medium heat and fry the garlic to light brown.
- 02Add the eggs and spread the eggs to cover the pan.
- 03Add the onions and make an omelette. Then scramble the omelette.
- 04Add the rice and stir through.
- 05Add all the meat and veggies of your choice. Do not add any liquid or green leaves.
- 06Now season the rice with the soya OR fish sauce and pepper.
- 07Give the rice a good stir and dish up.
- 08Add your choice of toppings.
- 09Serve hot.
