Banana Bread

Lots of bananas again. So here they are. This recipe is very moist and can challenge the hummingbird. It is rich enough to be a cake and sturdy enough to be a bread.

- 250 gUnsalted butter
- 180 gBrown Caster Sugar, or Raw Caster Sugar
- 1 teaspoonnutmeg, ground
- 1 teaspoonVanilla essence
- 5eggs
- 2bananas, mashed
- 1/2 cupcranberries, soaked
- 350 gself-raising flour
Cara
- 01Preheat oven at 170C.
- 02Cream and butter and sugar until almost white.
- 03Add the nutmeg powder and vanilla essence.
- 04Emulsify eggs one at a time. Add a little flour if there's difficulty.
- 05Add the bananas and mix well.
- 06Pour in the flour and cranberries and mix just enough to even and do not overmix.
- 07Bake for one hour in a middle rack.
