Eggs Benedict on Focaccia

We have come to a pandemic lockdown again. I think, until there is a good solution that involves more than just vaccines, we will probably have to get used to be locked down once in a while.

You can order almost anything, but not everything. One of them is eggs benedict. You can’t really get delivery order of eggs benedict. They won’t be nicely delivered.

So the good news is that it is extremely easy to make. Well, at least this recipe that I created. It is fail-proof, delicious and really fast.

The bread is also home made in 2 hours. Well, lock down is still not very fun, but it certainly makes us a little more adventurous with our cooking.

3 Eggs Eggs Benedict

<p>The third egg is for the holladaise sauce</p>

Ingredients

Hollandaise Sauce
  • 1egg yolk
  • 1 tspvinegar
  • 4 tbspbutter from the fridge
  • A pinchsalt
  • A pinchpepper
Poached eggs
  • 2eggs
  • 1 tspvingar
  • A pinchsalt
  • Water, enough to raise to 4 inchs up the pot.

Method

    <p>First boil the water in the pot, and then bring it to a simmer.</p>

    <p>Put the stainless steel bowl on top of the pot, ensuring the bowl doesn&#039;t have contact with the boiling water.</p>

    <p>Whisk in the egg and vinegar.</p>

    <p>Add the butter one tablespoon at a time into the egg and vinegar, whisk till smooth before adding the next tablespoon. If the egg starts to curdle, remove the bowl from the heat quickly.</p>

    <p>Season with salt and pepper. Set aside.</p>

    <p>Lower the heat of the boiling water.</p>

    <p>Crack the egg into a tea cup.</p>

    <p>Use a spoon to create a swirl in the middle of the pot.</p>

    <p>Then lower the egg in the tea cup gently. The egg whites will swirl. Don&#039;t be tempted to touch the water.</p>

    <p>Wait for 4 minutes.</p>

    <p>Remove the poached egg from the water with the slotted spoon.</p>

    <p>Served with toast, ham, spinach, rocket, smoked salmon, alvomash... anything you like!</p>
