Ayam Goreng Berempah (Indonesian Spicy Fried Chicken)

I think the Indonesians fry the best chicken. Their are always fragrant, crispy, delicious and full of flavour. My mother taught me to always add ginger to fried chicken. I can never figure what the chemistry is, but it always tastes wonderful.
Besides ginger, I also added tumeric, or yellow ginger. It makes the chicken look even more appetizing and inviting. Used a kampong chicken today, which means it is puny, but it is so delicious.

I pound the garlic, onion and lemon grass before adding the ground cumin, coriander and pepper to the mixture.

When all fried, it tastes like haven!

Ingredients
- 1Chicken, 1.5 to 2 kg, cut into 12 pieces
- 1egg
- 2 TbspCorn flour
- 1 cupoil for deep frying
Seasoning (ground together)
- 1 tspground cumin seeds
- 1 tspground coriander seeds
- 1 tspground pepper
- 3small shallots
- 4 clovegarlic
- 1lemon grass, sliced
- 1knob ginger
- 1knob tumeric
- 1-4red chili, add according to how spicy you want
- 1 TbspOyster Sauce or worcestershire sauce
- Salt and pepper
Method
- 01Season the chicken with the ground seasoning sauce for about 30 minutes.
- 02Heat up the oil to low to medium heat.
- 03Add the egg and corn flour to the chicken and combine well.
- 04Fry the chicken until juices from the chicken run clear.
- 05Rest of 5 minutes before eating.
- 06Serve with steamed white rice.
