Pound Cake

Ingredients
  

  • 200 g butter
  • 200 g caster sugar I used only 170g
  • 150 g self-raising flour
  • 50 g plain flour
  • 3 large eggs separated
  • 1/4 cup of liquid milk, coconut milk, juice, brandy, etc etc, your choice or flavour
  • 1 tsp vanilla essence if required

Instructions
 

  • Cream 200g of butter* with 100g of sugar (I used only 70g) till really white. Add 5 egg yolks one at a time, remember to aerate it.
  • Fold in 200g of self-raising flour (I used 150g self-raising flour and 50g of plain flour) , 1/2 at a time with 20g of brandy, 40g of milk.
  • Whip 5 egg whites with 100g of sugar till stiff peaks.
  • Fold the egg yolk mixture to the egg white mixture.
  • Check for a dropping consistency . If cake is still too dense, add a bit more liquid, or it will be too dry. This is an important step.
  • Pour into a 8 inch square pan that is fully lined.
  • Bake at 180C for 50 minutes to 1 hour, until skewer inserted to it comes out clean.
