Hot Cross Buns Pudding

Equipment

  • Baking dish (2 liter)

Ingredients
  

  • 6 9 to 10 cm hot cross buns
  • 40 g Butter
  • 2 Tbsp Marmalade (or any jam)
  • 2 Tbsp Frozen fruits
  • 1 tsp Powdered sugar For dusting

Custard

  • 6 eggs
  • 2 1/4 cups Milk and/or cream or a mixture of any portion The more milk, the firmer the custard
  • 4 tbsp Sugar
  • 1 tsp Cinnamon
  • 1 tsp Vanilla essence (I don't vanilla in my home bakes anymore)

Instructions
 

  • Oven should be set at 160C.

Custard

  • Mix all the ingredients well. But don't overbeat.

Hot cross buns

  • Split the buns horizontally.
  • Butter the top half, and spread the jam on the bottom half.
  • Coat the baking dish with butter and then arrange the buns on them. For the top, the cross on top. For the bottom, the jam side up.
  • Sprinkle the fruits on top of the bottom of the buns.

Put together

  • Pour the custard over the buns, leave it to stand for 10 minutes so that the buns are soaked.
  • Bake for 30-35 minutes, or when the top starts to brown.
  • Dust with powdered sugar and serve with whipped cream.
