cut the lamb into small pieces (if it comes with a bone, debone it).
marinade the pieces in salt and baking soda for 20 minutes.
slice your onions, red peppers and green onions and put them to the side.
add oil to the wok, a reasonable amount to fry the beef.
fry the lamb until it's dry.
remove excess oil.
add a ladle full of oil to the wok, get the oil hot enough to extract flavour (low-medium just until you can see little bubbles).
add chilli's and cumin, fry for a couple of seconds.
add vegetables, fry for about a minute.
add lamb, toss, taste, plate.
add cilantro either on the bottom or top of the plate. up to you.
