Simple Indonesian vegetable curry. Staple of most South East Asians. Added some prawns for extra taste.

Sayur Lodeh

Ingredients
  

  • 1 medium onion sliced
  • 2 cloves garlic
  • 1 Red Chili
  • 1 cup cauliflower
  • 1/2 cup long beans
  • 1 cup cabbage
  • 2 carrots
  • 1 brinjal/egg plant
  • 150 ml Coconut milk
  • 100 ml chicken stock
  • 100 g Prawns peeled

Spices

  • 1 tsp cumin powder
  • 1 tsp tumeric powder
  • 1 tsp coriander powder
  • 1 tsp curry powder optional
  • Salt and pepper to taste

Instructions
 

  • In a pot, fry the onions and garlic until fragrant.
  • Add the spices.
  • Add all the vegetables and stir through.
  • Add the prawns and then the stock.
  • Simmer until vegetables are all cooked, about 10 minutes.
  • Add the coconut milk and once boil, remove from heat.
  • Add salt and pepper to taste.
