Simple Indonesian vegetable curry. Staple of most South East Asians. Added some prawns for extra taste.
Sayur Lodeh
Ingredients
- 1 medium onion sliced
- 2 cloves garlic
- 1 Red Chili
- 1 cup cauliflower
- 1/2 cup long beans
- 1 cup cabbage
- 2 carrots
- 1 brinjal/egg plant
- 150 ml Coconut milk
- 100 ml chicken stock
- 100 g Prawns peeled
Spices
- 1 tsp cumin powder
- 1 tsp tumeric powder
- 1 tsp coriander powder
- 1 tsp curry powder optional
- Salt and pepper to taste
Instructions
- In a pot, fry the onions and garlic until fragrant.
- Add the spices.
- Add all the vegetables and stir through.
- Add the prawns and then the stock.
- Simmer until vegetables are all cooked, about 10 minutes.
- Add the coconut milk and once boil, remove from heat.
- Add salt and pepper to taste.
