Peanut Miso Stir Fry #meiwok – quick and easy! I think this would also work well with seafood.
Ingredients:
1/2lb bok choi, cut into bite sized pieces
2 chicken breasts, cut into bite sized pieces
4 cloves of garlic, minced
1in ginger, minced
2tbsp miso
2tbsp peanut butter
1 scant tbsp sesame oil
2tsp soy sauce
1/3c water
1tbsp lemon juice
neutral oil for frying
In a bowl, mix the miso, peanut butter, sesame oil, soy sauce, and water together until smooth. Heat the wok, add oil, and add the garlic and ginger, frying for about 20 seconds. Add in the chicken. When the chicken is nearly cooked, add in the bok choi and the miso/peanut butter mixture. Fry until everything is cooked. Finish by adding in the lemon juice, stirring to combine, and serve over rice.
