Every single culture has got fried chicken. There are so many versions, it is mind-boggling. I make fried chicken so often, I can do them in my dreams. This is my recipe. It is the easiest fried chicken I know, after I have redone this a thousand times. It can be made any way and in any flavour. Just change the seasoning. It can be modified to Indian, Chinese, Mexican, Japanese, Thai, Malay etc etc. My kids love this, and so do I. I know they will always finish all I make.
Mrs Lim’s Fried Chicken
Ingredients
- 5 chicken deboned thighs
- 1 Tbsp light soya sauce
- 1 tsp pepper
- 2 Tbsp rice flour
- 1 small egg
- 1 cup panko
Seasoning
- Any mixture of:
- Chilli powder
- Turmeric powder
- Coconut milk max 1 Tbsp
- Curry powder
- Ground Coriander and/or Cumin
- Paprika
- Ground Star Anise
- Any spice you like
Oil
- Enough vegetable oil for deep frying the chicken
Instructions
- Heat the oil in a pan or pot to medium.
- Season the chicken with soya sauce, pepper and spices for at least 20 minutes.
- Add the egg and the flour.
- Coat with the panko and fry till golden brown.
