Ingredients
  

  • 2 bowls of old cooked rice
  • Tablespoon or two or cooked chorizo
  • 2 mini bell peppers, diced
  • 2 jalapeño, diced - we keep the seeds for some heat
  • 3 scallions, diced, separate greens from whites
  • 2 x 1/4” slices of spam, cubed - you can replace with cubed ham
  • 3 eggs
  • 4/5 cloves garlic, minced
  • 1 coin of ginger, julienned
  • Soy sauce (light)
  • Sesame oil
  • Sesame seeds
  • Salt and pepper

Instructions
 

  • 1. Preheat wok to medium heat, prep as needed
  • 2. Cooked cubed spam into wok and crisp as desired. I actually typically cube it in the pan with a turner.
  • 3. Add ginger and carmelize in the leftover grease
  • 4. Add garlic and roast lightly, careful not to burn!
  • 5. add whites of green onions and toss ingredients.
  • 6. Add jalapeños and watch your nose!! Cook for 30/40 seconds, tossing frequently
  • 7. Add baby peppers and toss lightly
  • 8. Raise the heat to medium high or high and add a tsp of oil
  • 9. Add rice and break apart in wok. Turning frequently. Stir fry for 2/3 minutes until well coated and no longer stuck.
  • 10. Create a donut of rice and expose the center of the pan, add a tsp of oil
  • 11. Crack eggs into donut hole and scramble. Keep pulling to get thin layers of cooked egg. Once nearly done, mix everything together
  • 12. Continue to stir fry and add soy sauce to taste (typically 1-2 tsp), sesame oil (typically 1 tsp), cracked pepper to taste and sesame seeds (sprinkling)
  • 13. Add greens of onions and toss.
  • 14. Serve immediately!
