So this is just a standard pound cake with added bananas.

Ingredients:

Pound cakes are made with 250g each of 4 important ingredients:

sugar, self-raising flour, butter and eggs (by weight).

I reduced the sugar to 200g and replaced 1 egg for the same quantity of coconut milk, and added a teaspoon of vanilla essence.

Method:

  1. Cream butter and sugar till it is light and fluffy (almost white)
  2. Add egg one at a time, each time until it is emulsified. Then stir in the milk and vanilla.
  3. Fold in flour with as few strokes as possible.
  4. Bake at 175 degree Celcius, for 45 minutes on the medium shelf.

Cake is almost always a hit if you use the best butter unsalted butter you can afford. 🙂
