Lots of bananas again. So here they are. This recipe is very moist and can challenge the hummingbird. It is rich enough to be a cake and sturdy enough to be a bread.
Banana and Cranberry Bread
Ingredients
- 250 g Unsalted butter
- 180 g Brown Caster Sugar or Raw Caster Sugar
- 1 teaspoon nutmeg ground
- 1 teaspoon Vanilla essence
- 5 eggs
- 2 bananas mashed
- 1/2 cup cranberries soaked
- 350 g self-raising flour
Instructions
- Preheat oven at 170C.
- Cream and butter and sugar until almost white.
- Add the nutmeg powder and vanilla essence.
- Emulsify eggs one at a time. Add a little flour if there's difficulty.
- Add the bananas and mix well.
- Pour in the flour and cranberries and mix just enough to even and do not overmix.
- Bake for one hour in a middle rack.
